
We are thrilled to announce the opening in December of yet another school kitchen! Located in the community of El Salitre, this kitchen will provide meals for 35 elementary school students and 15 kindergarteners. Hard-working staff members David Araiza and Antonio Perez were able to transform a pre-existing room into a fully functional kitchen in just a matter of days!
The small town of El Salitre lies at 1,862 meters altitude. The latest census (2020) reported that the population of the community was 201 men, women, and children, residing in 52 households. At that time, 25% of inhabitants were younger than 14 years of age. The average school achievement for adults was less than 7 years; 9% of the adult population were illiterate. Only 34% of the homes had piped water; only 15% had indoor toilet or sanitary facilities.
Feed the Hungry San Miguel considers opening a new school kitchen when approached by representatives of the community. We assess the needs of the population, the location, the facilities, and the commitment of school administrators and the mothers of the school children, all factors important to the success of the operation. Following an evaluation of the condition of the children, a staff nutritionist determines the nutritional and caloric needs of each school group and a trained chef develops recipes and menus accordingly. Health assessments are conducted to evaluate the impact of the meals programs, and educational workshops are offered for families.
